  • 2 medium zucchini, cut into 1/2-inch half-moons

  • 2 medium summer squash, cut into 1/2-inch half-moons

  • 1 red bell pepper, sliced into 1/2-inch pieces

  • 1 cup cherry tomatoes, halved

  • 3 tablespoons extra virgin olive oil

Instructions:

  1. Wash all vegetables thoroughly.
