The Juicy, Flavor-Packed Steakhouse Secret You’ll Never Pay Restaurant Prices For Again
1. The Method
This is the method I use to make steak for my family, and we almost never see the inside of a steakhouse anymore. My wife swears it’s the best steak she’s ever had — better than anything we’ve paid $60+ for. The secret is in the reverse-sear: slowly bringing the steak to temp in the oven, then finishing with a hot, buttery crust on the stovetop. It’s tender, evenly cooked, and full of rich, beefy flavor from edge to edge.
2. Ingredients
2 boneless ribeye or New York strip steaks (1.25–1.5 inches thick)
2 tbsp cooking oil (avacado oil works best, but olive oil will work too)
Kosher salt
Freshly ground black pepper
2 tbsp butter
2 garlic cloves, smashed
1–2 sprigs fresh rosemary or thyme (optional)

3. Instructions
🔥 Step 1: Dry & Season
Pat steaks dry with paper towels.
Liberally season all sides with kosher salt and pepper.
Place on a wire rack over a baking sheet and refrigerate uncovered for 1 hour to overnight (optional, but improves crust and flavor).
♨️ Step 2: Low & Slow
Preheat oven to 200°F (120°C).
Place steaks (still on the rack) in the oven.
Cook until internal temp reaches 120°F for medium-rare (about 50-60 minutes). Use a meat thermometer for best results.
Remove and let rest while you prep your pan.
🔥 Step 3: Sear for the Finish
Heat a cast iron skillet or Cutco Griddle over medium heat until smoking hot.
Add oil, then the steaks.
Sear each side for 1–2 minutes until deep brown crust forms.
During the last 30 seconds, add butter, garlic, and herbs.
Baste the steaks with melted butter using a spoon.
Remove from heat and rest 5 minutes before slicing.

Want that smoky char flavor? You can reverse-sear on the grill, too. Start by setting up a two-zone fire — one side with indirect heat (no flames or coals underneath), and one side with direct high heat. Place your seasoned steaks on the cool side of the grill, close the lid, and cook until they reach an internal temp of 120°F for medium-rare. Then move them to the hot side and sear for 1–2 minutes per side to build that beautiful crust. Just like with the skillet method, let them rest for 5 minutes before serving. You’ll get the same edge-to-edge doneness with a bonus kiss of flame.
